Summer Berries With Crème Fraiche
Ingredients
Use a selection or all of the berries listed below.
110g/4oz strawberries
110g/4oz blackberries
110g/4oz raspberries
110g/4oz blue berries
110g/4oz loganberries or cranberries
Then the juice of 2 oranges
90g/4oz caster sugar
½ vanilla pod, or vanilla essence
1/2 cinnamon stick
200ml/17fl oz red wine preferably a fruity Italian red
100ml sherry
Method
  1. In a hot pan place the sugar with the vanilla and cinnamon.
  2. Start adding the berries, firmest first and softest last and then the orange juice, and the red wine / sherry Cook the berries for approximately 2 minutes and remove from the heat cool on a bench until no steam leaves the bowl then cover and refrigerate.
  3. To finish I like using a small amount of roughly chopped vanilla sponge in an individual serving bowl.
  4. Then add the berries and some of the syrup top with a good dollop of crème fraiche.
Serve immediately
NOTE

In summer I love having either chilled or hot fresh mint tea. You just need lovely fresh mint and boiling water. This is a very simple and refreshing way to finish any dinner on a beautiful summers evening.
